Beat/mix
Separate 12 eggs, yolks from whites (6 oz, 18 cl, 1 1/2 gills)
Mix vigorously until thick
Beat whites until stiff
Slowly fold beaten whites into egg yolk mix
Top with nutmeg
12 egg yolks (6 oz, 18 cl, 1 1/2 gills)
1 lb. sugar (1/2 oz, 1.5 cl, 1/8 gills)
1/4 tsp cream of tartar (1 dash)
1/4 tsp cloves (1 dash)
1/4 tsp cinnamon (1 dash)
1 heaping tbsp batter
1 oz light rum (3 cl, 1/4 gills)
1 oz brandy (3 cl, 1/4 gills)
Serve in a mixing bowl (32.0 oz)
